Our single vineyard Persimmon Paddock Cabernet has aromas of crushed fennel leaf and blueberries with hints of spicy cardamom. The palate is silky smooth with a full fruit flavour. The wine is balanced by an inherent richness coupled with a savoury broth complexity and subtly drying tannins that linger on the back palate.
Our planting of Cabernet Sauvignon was around several fruit trees which were very old and had been on the property for eons. In the middle of the planting was a beautiful Persimmon tree which had the most stunning, starkly tangerine coloured fruit at leaf fall. In spite of its natural beauty,we received many complaints from drivers trying to manoeuvre their large harvesting machines and tractors around this tree. Comments about greenies and city slickers caused us to capitulate in the end and cut down our beautiful tree although we have managed to retain our century old pear trees on the edge of the block. The persimmon tree lives on in name only.
